Minestrone Soup
Ingredients:
2 1/2 handfuls of baby carrots
32 oz chicken broth
1 can condensed tomato soup
14.5 oz can diced tomatoes (drained)
15.5 oz can white kidney beans (rinsed & drained)
3 stalks of celery
1 c pastina
1 chicken bouillon cube dissolved in 2 c of hot water
1/4 tsp thyme, basil, oregano, rosemary
group pepper to taste
Directions:
Boil carrots in water until fork tender. Chop celery and carrots into bite size pieces. Combine all ingredients (except patina) in a large pot and bring to a boil. Add pastina - continue to boil on medium heat for 7 minutes.
Serve with bread and salad and enjoy!
